Yummy Tasty Courgette Muffins

Afternoon!

Lots to catch up on my friends! My Lil Pudding started walking a couple of weeks ago, at the ripe old age of 9.5 months!! 😱

I didn’t see that coming at all…I thought she would walk later than her big bro who took his first steps at 10.5 months but she had other ideas! 

It could be all the food she’s scoffing – she LOVES to EAT! The only thing she isn’t keen on though, is cooked courgette (zucchini) – it’s probably the texture but she just won’t eat it.

That is, until I tricked her this week with these delish Cheesy Courgette Bites 😋

They only took me 20 minutes to create and bake plus, smashed 2 of them in one sitting and was clueless about the courgette she was scoffing – that’s a win in my book!

What You Need: 

1.5 Cups Self Raising Flour

1/3 Cup Mild Cheddar, grated

3/4 Cup Almond Milk 

1 Courgette, grated

1 Egg, whisked

1/2 tsp Mixed Herbs 

1 tbsp Extra Virgin Olive Oil

What You Need To Do

Heat oven to 180c/375f/Gas Mark 3

Grate the courgette and squeeze out the excess water

Sieve in the Flour, add the mixed herbs, cheese and oil 

Whisk the egg with the milk in a separate bowl

Combine the two mixtures until a batter is formed but don’t over mix

Divide the batter between a greased 12-hole muffin tin

Bake for 20 minutes until golden brown

Cool them for 20 mins or serve warm after 10 mins…if your child or adult company lets you!!
