Everybody Got Time Fo Dat! – One Pot Rice

Ask and you shall receive, my friends!

Earlier this week, I made one of my fave ‘quick AF but tasty AF mummy meals’ – we all have that one dish that takes very little effort to prep, even less time to cook but feeds the entire family and leaves you feeling like a unicorn goddess of the kitchen! 

I posted a poll to my Instagram page asking who’d be interested in the recipe and, after a resounding 100% of you who voted said ‘yuuuup!’, here it is! 

This dish requires only one pot, 5 ingredients and less than 30 minutes to create. Deploy this one the next time you have very little time and hungry tummies to fill ☝🏾👌🏾

What You Need 

1 & 1/2 Cups of Basmati Rice, rinsed

3 cups of low salt Vegetable or Chicken Stock

1 Cup of Lean Turkey Mince

1 Cup or Frozen Mixed Vegetables

1 Onion, diced 

Extra Virgin Olive Oil, for light frying

Seasoning to taste

What You Need To Do:

Heat the oil in the pot then add the onion and fry for 3 minutes until clear

Add the lamb mince to the pot and brown all over

Add the seasonings to the pot and cook for another minute

Next, add the stock and the rice to the pot and stir well

Finally, add the mixed vegetables, bring to the boil then turn the hob down to a simmer for 20 minutes 

Turn off the heat and leave for 5-10 minutes and then grab a bowl, fork and dig in!!🍚🍱🍛

Vegetarians- leave out the mince and add 1/2 cup more veg with 1/2 cup more vegetable stock👌🏾
