Mama Muffins!


The last few weeks have been filled with newborn snuggles, nappies, sick, sleep deprivation and toddler life – basically I’ve been parenting HARD!

But I’ve done my best not to let my health slip because my 8 week old is a greedy beasty and nurses ALOT so I need all the energy I can get!

So much so, that I’ve been trying to think of ways to increase my supply to keep up with her demand using healthy recipes that don’t taste like cardboard.


I hit a win with these yummy Oatmeal ‘Mama Muffins’ I made yesterday. These contain milk-boosting ingredients, Brewers Yeast, Flaxseed and of course Oats – great for nursing mamas, which are also superfoods, and great for non-nursing mamas, parents or anyone looking to have a healthy snack and an energy boost all-in-one!


They are sugar, gluten and fat free and are ready in 25 minutes – great for anyone if you ask me!

What you need:
2 ½ cups Gluten Free Oats (1.5 cups ground, 1 cup whole)
2 Large Ripe Bananas, mashed (or 1 Cup Unsweetened Applesauce)
2 Large Free Range Eggs, beaten
1/3 cup Organic Honey
3/4 cup Almond Milk
2 tsp Vanilla Extract
1 tbsp Brewers Yeast
1/3 cup Ground Flaxseed
2 tsp Baking Powder
1/2 tsp Bicarbonate of Soda
1/2 tsp Salt
1 tsp Cinnamon
1/4 Dark Choc Chips (optional but VERY nice 👍🏾 )

What to do:

🔸Heat the oven to 180c/350f/Gas Mark 3
🔸Grind 1.5 cups of the Oats in a blender until like flour and pour into a mixing bowl
🔸Add the whole Oats and dry ingredients to the bowl and stir to blend roughly
🔸In a separate bowl, add the eggs, mashed banana, vanilla, honey and chocolate chips, if adding, and stir lightly until blended
🔸Add the wet mixture to the dry mix and stir into a batter
🔸Divide the mixture into 12 muffin cases in a muffin tray
🔸Bake for 20 minutes or until bouncy to the touch


Leave to cool for 10 mins, if you can show restraint that long and enjoy with a cuppa…if you get the chance! Otherwise, scoff whilst playing duplo with your toddler, if you have one! 🤷🏾‍♀️🤣
