I’m coming to the end of my second trimester in this second pregnancy and I’m constantly, relentlessly hungry. Al the time.
So far though, I’ve eaten relatively well during this pregnancy, save for the 6-12 weeks period where I had ‘morning’ Sickness but never actually threw up, just feeling sick in the evenings until it went at around 15 Weeks – during that time all I wanted was salty, fatty foods!
Continuing the healthy trend, I’m always on the look out for healthy variations of my fave snacks. This week it was Cookies.
I have a thing for chocolate oats at the moment so I decided to test out Meridian’s new Cocoa Peanut Butter in some Oat Cookies.
The result was immense! Even hubs liked them and he rarely likes my healthy treats…he’s of the mind that if you’re going to eat a cookie, eat a PROPER cookie 🤣
They took less than 5 mins to prep and 15 mins to bake with no fuss whatsoever. 👌🏾
2 Cups Quick Oats
1/2 Cup Meridian Cocoa Peanut Butter
2 Ripe Bananas, mashed
1 tbsp Maple Syrup
1 tsp Vanilla Extract
Pinch of Salt
1/4 cup Chocolate Chips – optional
Heat the oven to 350f/180c
Mix all the ingredients together in a mixing bowl
Spoon the mixture into cookie sized balls onto a lined baking tray
Bake for 15 minutes until firm to touch but softer once pressed
Eat voila – snack attack sorted! 👍🏾😋
