What a glorious day we’ve had in London today. Sunshine, heat…managed to get three loads of washing done, dried and folded. Also managed to enjoy the garden for what may be the last time this year – win!
To add to the day’s loveliness, our little Dumpling turned 15 months today. He’s a little energiser bunny – full of beans, loves to run around and who’s favourite words are Clock, Ball, Star and Daddy. He’s also getting to know defiance – like not listening when we tell him not to play with socket switches and now refusing to eat certain foods which he would have stuffed down him before now.
So I’ve had to get more creative in the kitchen and think of different ways to incorporate veggies into Dumpling’s food without it being obvious that I want him to eat a handful of greens!
Today’s tetchy toddler food triumph was Spinach & Cream Cheese Catherine Wheels – or spinach and cheese rolled up in puff pastry in other words!
These literally took 10 minutes to prep and 15 mins to bake. Perfect for when you have a hungry little mouth to feed with not much time 👌🏾
1 cup Spinach, washed with stalks removed
1/2 cup Ricotta cheese
1 sheet of Puff Pastry
Heat oven to 200c / 390f
Line a baking sheet with baking parchment paper
Roll out the pastry on a flour dusted surface
Spread the cheese over the sheet of pastry
Spread the spinach leaves over the top of the cheese
Roll the pastry up length ways into a ‘swiss Roll’
Cut into sections 3-4cm in width using a pizza cutter or sharp knife
Bake on the oven tray for 15 mins until golden brown
Dumpling devoured an entire Roll then proceeded to climb the settee and jump around like a crazed bunny. Now, I’m not saying these will have the same effect on your toddler (or you, for that matter) but he definitely enjoyed it and I was happy he didn’t notice the spinach stuffed inside, so everyone’s a winner…hyper toddler or no 🤗💪🏾
