What a miserable rainy cold day in London today!
Luckily, once the oven is on, the house warms up very nicely. That gave me an excuse to get cosy in the kitchen and bake some treats for my Lil Dumpling😆
I had two sad ripe Bananas in the fruit bowl and some blueberries which were sitting in the fridge on the verge of getting upset themselves. After evening milky milk and story time, whilst Dumpling had a splash during bathtime with Daddy, I got in the cosy Kitchen to whip up these yummy baby-friendly Banana & Blueberry Muffins 😋
These were made, baked and on the cooling rack before Dumpling got into bed – and bathtime to Bedtime only lasts 20 mins!
Super easy, refined sugar-free and full of gooey fruitiness, I’m sure Dumpling will scoff these down in the morning for breakie after a lovely sleep…here’s hoping!
A cosy kitchen from an oven pre-heated to 180c/375f/gas mark 3
2 Ripe Bananas
1 Cup Blueberries
2 1/2 Cups Self-Raising Flour
3/4 Cup Oats
1 Egg, Whisked
1 Cup 0% Fat Greek Yoghurt
1/3 Cup Canola Oil
1/2 Cup Almond Milk
In a mixing bowl, mix the flour and oats together until well combined
Add the remaining ingredients and mix together until a soft doughy mixture forms
Line a 12 hole Muffin tin and divide the mixture between them
Bake for 15-20 mins until golden brown on top
Leave to cool for 20 mins and either share with your little ones or scoff them yourself – no judgement here! 🤣👌🏾
