I had two sad and lonely overrripe Bananas sitting in my fruitbowl this weekend.
You know when they get so upset that when you pick them up, the stall falls off and their ends are then exposed? I’m talking REALLY depressed Bananas.
Not one to throw food away too often, I decided I’d put these poor Bananas out of their misery and make some Banana & Peanut Butter Flapjacks.
After I put the Dumpling down for a nap, I heated up the oven and scooped the poorly used-to-be-yellow fruities up to reincarnate them!
These flapjacks literally take 5 minutes to throw together and 15 minutes to bake.
To make them, you’ll need:
2 Cups Organic Rolled Oats
1/4 Cup Organic Honey
2 Ripe Bananas (unhappy or happy doesn’t matter)
2 tbsp EV Melted Coconut Oil
1/3 Cup Mixed Raisins and Saltanas
2 tbsp Peanut Butter
1 tbsp Seeds of choice – I love sunflower and sesame
Mix the melted oil with the peanut butter and honey in a saucepan on a low heat
Add the remaining ingredients and stir until well bound
Turn off the heat and grease a baking tray with some coconut oil
Pour the flapjacks into the tin and flatten them until the tin is fully covered
Bake at 180c for 15 mins until golden brown
Cut into squares and leave to cool on a wire rack for 10 mins
Et voila – the little sad bananas are now happy again and have new nutty and fruity friends to hang out with!
