Iron Man Muffins

So, our Dumpling decided to start walking at 10 months 😱This is great, but it does get tiring running around after such an energetic baby!

Whether it’s a baby you’re running after or just life in general, every now and then we all run low on fuel during the day and need that ‘pick-me-up’ to keep going.

Instead of reaching for a sugary snack or a salty packet of crisps (chips accross the pond), give these delicious Iron Man Muffins a go! They’re packed with Spinach (hence, the iron ref 😉) and full of flavour with English Mustard and Parmesan which gives them a little kick.

Better still, they only take 15 minutes to make. Even better still, they are perfect finger foods for little ones who are weaning (there’s no salt!) or bigger ones with hungry bellies! Win, win, win!! 💪🏾

Easy Iron Man Muffins

For or these beauts, you’ll need:

1&1/2 cup Self Raising/All Purpose Flour
1 cup 0% Fat Greek Yoghurt
1&1/2 tsp Baking Powder
1/2 cup Baby Leaf Spinach, washed and thinly chopped
1 tbsp grated Parmesan
1 tsp English Mustard Powder
1 Egg, whisked
1/2 cup Almond Milk (or Whole Milk if avoiding allergies for little ones)
Coconut Oil, melted for greasing

Method:

Heat oven to 190c/350f/gas mark 3

Grease a muffin tin with the coconut oil

Sift the flour, mustard and baking powder into a mixing bowl

Stir in the cheese and Spinach

In another small bowl, whisk the egg and milk together then stir in the Yoghurt

Slowly add the wet mixture to the dry mixture then mix together until well bound

Divide the mixture between the muffin holes and bake for 15 minutes or until golden brown

Leave to cool for 10 minutes and keep an eye out for greedy little (or big!) hands looking to steal some whilst you’re not looking! 😁
