My little dumpling turned 8 months on Friday! He’s crawling, climbing and cruising all over our living room now, so it’s time to childproof our home.
Amongst all that, my eating habits haven’t been the best in the past few weeks. I have been eating far too many peanut M&Ms and bread. It was fine before, as I was nursing my greedy chunky chunk around the clock but, now he’s on solid food and not nursing as much, my body is storing ALL of the food.
I decided I needed to get back into old baking habits. Since gluten has a habit of sticking to my arse and tummy, I tried out these delicious Paleo Maple Muffins, inspired by one of my lil dumpling’s favourite nursery rhymes at the moment.
The best thing about these, after the taste of course, is that they only take 10 minutes to prep and 15 minutes to bake, which is a winning combo when you have an energetic sleep terrorist to run around after!
To make these beauts, you’ll need:
3 Free Range Eggs, Large
3 tbsp Maple Syrup
2 tbsp Melted Coconut Oil
1/3 cup Coconut Flour
Pinch of Salt
2 tbsp Unsweetened Almond Milk or another nut milk of choice
1/2 tsp Vanilla Extract
1/4 tsp Baking Powder
Heat the oven to 190c/400f/gas mark 4
Mix the Baking Powder and Coconut Flour together
In another bowl, mix the other ingredients together, then combine the flour mix with the wet mixture until well combined
Divide the batter into 6 or 8 muffin tin holes, depending on the size of your tin
Bake for 15 mins then leave to cool for 10-15 mins
I topped mine with a mix of pecans and unsweetened coconut but this is totally optional.
I love the way these muffins make the kitchen smell whilst they are baking and afterwards. The hubs liked them too, which is good but that means I had to share!
